Shami kebab literally means Syrian kebab (Sham) in Arabic. This kabab almost appears like a patty or cutlet which is pan fried and served with mint or coriander chutney, sliced onions and lemon juice. It is a nutritious and healthy kebab. This kebab is extremely popular in Afghanistan.
Ingredients
- Minced mutton - 500 gms
- Eggs - 2, well beaten
- Onion - 1 medium, chopped
- Green chilly - 5, chopped
- Bengal gram - 100 gms
- Garlic - 10 pods
- Cumin seeds - 1 tsp
- Cardamoms - 4
- Cinnamon - 1 inch long piece
- Ginger - 1 inch long piece
- Peppercorns - 6
- Red chillies - 4
- Clarified butter (ghee) as required
- Water - 3 cups
Directions
- Boil minced meat in 3 cups of water and a teaspoonful of salt till water is absorbed and meat is tender.
- Then grind meat into a fine paste.
- Take garlic, cumin seeds, cardamoms, cinnamon, ginger, peppercorns, red chillies and soaked bengal gram and grind into a fine paste.
- Mix both the pastes well.
- Now mix well beaten eggs and prepare a uniform dough.
- Add finely chopped green chillies and onion to dough and mix well.
- Shape the dough into small round flattened balls or kebabs.
- Heat ghee and deep fry kebabs till golden brown and lightly crisp.
- Serve hot with sauce or chutney.
